Antipasto Della Casa

Prosciutto Crudo stagionato comes from the legs of Italian pigs and processed by hand. After resting in the cold-storage room, it is washed and hung in the natural air. The meat is aged in two stages, 9 months in a properly aired premises then in cellars for as long as 16 months.

Salame Chiantigiano is the best parts of meat from Italian pigs, then finely ground and seasoned with salt, black pepper, garlic and Chianti wine. Dried and matured for at least sixty days, it has a beautiful intense flavour.

Capocollo is processed with salt, pepper, fine herbs with careful rubbing sticking to the traditional Senese method. The meat is then dried, wrapped in straw-paper and aged in cool cellars for at least three months.
